JOB PURPOSE:
The Food and Beverage Controller will implement the established system for controlling all F&B Departments, and will execute effective procedures for the following: recording accurate data, continuous updating of statements and reports on the cost and sale of F&B, and the presentation of timely and reliable information to Hotel Management.
DUTIES & RESPONSIBILITIES:
- Monthly stock taking of all departments of the Hotel including F&B, Housekeeping and Spa.
- To prepare the monthly statistical analysis of F&B Departments, with a detailed account of monthly consumption of every item on offer, with the aim of finding what items have the most or least profitability.
- To make suggestions, armed with the above analysis, to the F&B Manager for purposes of Menu Engineering.
- To prepare costings (portions, quantities, recipes) of the food and drinks menus offered at the Hotel and review them in accordance with the current cost of goods on the market.
- To calculate and record the Potential Food Cost of every Sub-section before the beginning of every month using the statistical analyses of the menu selection available at the restaurants and the current cost of each selection based on menu costings.
- To prepare the Monthly Food & Beverage Report.
- To carry out costings for events based on the Events Costing Form.
- To make corrections to entries in the accounting system for stock when necessary, as a result of discrepancies in the monthly inventories. Before making the entries obtain the written approval of the Accounts Supervisor / Income Auditor.
- To be the administrator of the F&B Micros POS and to add and adjust articles and prices.
- To control the SOE of the Hotel and analyse the total damages and losses.
REQUIRED QUALIFICATIONS AND SKILLS:
- Bachelor’s degree in accounting, Finance or related field
- Fluent English, knowledge of additional language will be considered an advantage
- Accounting expertise
- Experience in the hospitality industry is a plus
- Ability to work in a fast-paced environment
- Analytical skills & finance knowledge
- Strong attention to detail
- Strong management and leadership skills with excellent organisation and problem-solving skills
