Position: Cooker & Mise en Place (Asia Cuisine Specialist)

Responsibilities and Duties:

  1. Asia Cuisine Expertise:
    • Demonstrate proficiency in Asian culinary techniques, flavors, and presentation styles.
    • Showcase a deep understanding of diverse Asian cuisines, including but not limited to Chinese, Japanese, Thai, and Vietnamese.
  2. Hot and Cold Kitchen Mastery:
    • Execute culinary tasks proficiently in both hot and cold kitchen environments.
    • Manage temperature-sensitive ingredients effectively to ensure optimal food quality.
  3. Fish and Meat Management:
    • Handle and prepare a variety of fish and meat dishes with precision.
    • Ensure proper storage, handling, and cooking techniques for fish and meat to meet quality and safety standards.
  4. Mise en Place Excellence:
    • Organize and prepare ingredients, ensuring a seamless and efficient workflow during service.
    • Maintain meticulous attention to detail in the preparation of mise en place to enhance kitchen efficiency.
  5. Collaborative Kitchen Support:
    • Collaborate with the Sous Chef and kitchen team to contribute to the overall success of the kitchen.
    • Assist in menu execution, ensuring the consistent delivery of high-quality dishes.
  6. Adherence to Culinary Standards:
    • Follow established culinary standards and recipes.
    • Implement hygiene and safety practices to uphold kitchen cleanliness and compliance.
  7. Menu Familiarity and Innovation:
    • Stay informed about the restaurant's menu offerings, including specials and seasonal changes.
    • Contribute ideas for menu innovation within the framework of Asian cuisine.
  8. Quality Assurance:
    • Monitor and maintain the quality and freshness of ingredients.
    • Conduct regular inspections to ensure adherence to food safety standards.
  9. Time Management and Efficiency:
    • Exhibit strong time management skills to meet the demands of a fast-paced kitchen environment.
    • Ensure efficient preparation and timely delivery of dishes during service.
  10. Continuous Learning:
    • Stay updated on current trends and developments in Asian culinary arts.
    • Attend training sessions and workshops to enhance culinary skills.

Qualifications:

  • Previous experience in Asian cuisine is essential.
  • Proven expertise in both hot and cold kitchen environments.
  • Proficiency in handling and preparing fish and meat dishes.
  • Knowledge of mise en place principles.
  • Strong collaboration and communication skills.
  • Adherence to hygiene and safety standards.
