Position Title: Sushi Chef
Department: Kitchen
Reports To: Head Chef / Outlet manager

Position Summary:

A Sushi Chef is responsible for preparing and serving sushi and other Japanese dishes. They must ensure high food quality, presentation, and safety while working efficiently in a fast-paced kitchen e

nvironment. The Sushi Chef should possess strong culinary skills, particularly in sushi preparation, and a thorough understanding of the cultural significance of the dishes they create. A Sushi Chef will also need to maintain cleanliness and organization in their work area, work closely with the kitchen staff, and provide excellent customer service.

Key Responsibilities:

  • Sushi Preparation:
    • Prepare various types of sushi, including nigiri, sashimi, rolls, and special sushi creations, using fresh ingredients.
    • Prepare and cut fresh fish, seafood, and vegetables for sushi dishes.
    • Maintain proper knife skills and sushi preparation techniques.
    • Ensure the sushi rice is properly seasoned and prepared.
  • Quality Control:
    • Ensure all dishes meet the restaurant's high standards for quality, flavor, and presentation.
    • Inspect ingredients to ensure they are fresh and suitable for use.
  • Customer Interaction:
    • Occasionally prepare sushi at the sushi bar in front of customers (if applicable).
    • Answer customer questions about sushi ingredients, preparation methods, and recommendations.
  • Kitchen Collaboration:
    • Work closely with the kitchen team, including sous chefs and line cooks, to ensure the smooth flow of orders.
    • Assist in the preparation of other Japanese dishes, such as miso soup, Poke bowls , and appetizers, as needed.
  • Food Safety & Hygiene:
    • Follow all food safety regulations, including proper food storage, handling, and sanitation practices.
    • Keep the sushi bar and kitchen area clean, organized, and free from hazards.
  • Inventory Management:
    • Assist with ordering and maintaining stock levels of sushi ingredients, including fish, rice, nori, and vegetables.
    • Ensure the proper handling and storage of perishable ingredients.

Skills & Qualifications:

  • Culinary Education:
    • Formal culinary training or sushi-specific training preferred but not required.
  • Experience:
    • Prior experience as a sushi chef or in Japanese cuisine is strongly preferred.
    • Knowledge of traditional Japanese sushi-making techniques, including fish selection, preparation, and presentation.
  • Knife Skills:
    • Strong knife skills and ability to fillet and slice fish efficiently and safely.
  • Creativity & Presentation:
    • Ability to create visually appealing dishes with attention to detail in presentation.
  • Time Management:
    • Ability to work in a fast-paced environment while maintaining high-quality standards.
  • Team Player:
    • Must work well with others in a collaborative kitchen environment.
  • Food Safety Knowledge:
    • Understanding of food safety and hygiene standards, including handling raw fish.

Physical Requirements:

  • Ability to stand for long periods of time.
  • Dexterity to use knives and other sushi-making tools.
  • Ability to lift and carry heavy items, such as boxes of ingredients.

Working Conditions:

  • Fast-paced kitchen environment.
  • Must be able to work evenings, weekends, and holidays as required.
  • Exposure to high heat, knives, and other kitchen equipment.

Compensation:

  • Competitive salary package based on knowledge and background.
